I made a Portabello Mushroom pizza today: made with tinned tuna fish, onion, pizza base sauce and half-fat grated mozerella cheese (from Tesco supermarket). It was very tasty, but the cheese didn't melt it just went crispy - I'll just use ungrated next time. which wasn't as nice. Tasty nevertheless.

Yum! I'm creating alternates for my foods and I'll add the portabella mushroom cap as a replacement for pizza dough. I've already used it in the past as a replacement for a hamburger bun and spaghetti squash as a replacement for past.
OK I need to try this. I was using whole wheat tortilla shells. But I love love mushrooms. I would prob try it with turkey sausage and onions. OMG it looks sooooooo good. Thanks so much for sharing it with us Wendy.
I'm going to give it try! Loved the lite shrimp alfredo recipe you gave. Today I tried a new pasta. I can't tolerate wheat pasta since I got my last fill. My favorite dish is pesto and pasta and I haven't had it much since I can't tolerate pasta and that makes me sad. This weekend I tried Soba noodles which are Japanese and made out of buckwheat. So far I've tolerated the small amount I had and got some pesto in me! Happy girl!
I'm trawling through cook books to plan for my pre-op diet (take 2 after op was cancelled in Dec) and found the mushrooms with an egg and bacon bits on the top for breakfast. yumy!
that looks yummy!!! but i dont like mushrooms :( someone told me that those portabella mushrooms dont tast like a regular mushroom but i dont know..lol
