  • I was wondering, what kind of paper did you use on the cookie sheet? Was it reusable? I was just wondering.

    Thanks in advance.

  • @rockcabbage That's called a Silpat or Silicon Pat and it's a reusable nonstick mat you just slip into the baking sheet. They're about 15 dollars.

  • @MalkavianHand here in the Philippines, silicone mat cost more or less PHP1,200 which is US$26... i just bought it and it's really non-stick but my cookies spread a little...

  • THIS IS AWESOME !

  • why do you always put cayenne pepper in all your desserts?

  • yummy in my tummy:)

  • yummy in my tummy:)

  • @MrsGollygumdrops

"Yummy yummy yummy i got love in my tummy..."

  • I want some :(

  • This looks awesome! I really want to try these! I find it so amazing how foods that don't seem together just compliment each other so well, and I totally agree fresh cracked pepper is the way to go no more canned pepper.

  • D: its so delicious

  • Yum !! I HAVE to try this. The user rating say it all don't you think?

  • @whydoihavetocry You still can the alcohol will go away when they are in the oven

  • aww i wanted to give my son some but the kahlua

  • can we leave out the kearns

  • That would look great in my cookie jar! If only I had an oven.....

  • Two words: dark, beer. Excellent combo. A nice porter or stout goes with this like Stan & Ollie,

  • Whew. They're something. The peppers definitely don't make it taste as if you're eating a "pepper cookie", but there is a slight something at the back of the throat that hints at a little spice. Excellent, excellent cookies.

Kudos to Chef John and Mrs. Chef John.

  • Going to give these a shot this afternoon. I've chosen to omit the Kahlua-soaked currants because Kahlua is a bit too pricey for one experimental recipe, and I have to travel some distance to find the proper currants.

Will report back with the results later. Thanks, Chef John!

  • i hope there's chocolate in heaven.

  • Okay I need to stop watching these... Darn they look good though.

  • Exactly my thought. It is a form of self-torture :S I watch them and just feel deprived... they all look to good!

  • I just made these today... delicious :D

  • YUM *drool*

  • "Aren't my wife's hands much nicer than mine?" "So... much less hairy."

    HAHA! I love it!

  • your wife should be a hand model lol

  • Well it's good to see your advocate of Marijuana.

  • I just made these. I'm so proud of myself.

  • @MerryMinstrel where they good??

  • They were very good! A big hit at the party I took them to.

  • @MerryMinstrel ooh! how were they?! :)

  • @MerryMinstrel Congrats to you. We all owe these to Chef John.. hah!

  • @MrWarhead16 I make them all the time for company now. I feel like a magician when I tell them the ingredients.

  • i am going to make this for my christmas party, and i want to substitue the currants for raisins since i cannot find any where i live. will that be alright?

  • i would have loved to see you break one..

  • Great vids!!! love your "mole" cookies. lol

  • thats just disrespectful

  • u make me hungry

  • 2:18

    it's chocolate?

  • There is something floating in the water @ 0.33, but I'm not sure if it's a fly. Not that it matters because the water is just being used to melt that chocolate, it's not an ingredient.

  • yeah i guess you're right but its still gross :P

  • it's the light shining on top of the currant/water mixture, lol..

  • i didn't mean that one it was right after that in the pan that only had water

  • yea i saw a fly on 0:33

  • omg! there was a fly inside >:O watch closely on 0:34

  • there was no fly :/

  • just look at the pan below at 0:33 its a bit small but you can see it moving inside :{}

  • that's the liquor :P

  • look at the water not whats before that in the black things in the water right in the beginning of 0:33

  • where?

  • look at the pan below before he puts the other one on top 0:33 there is a small fly moving inside :E

  • Well that fly gave its life for a good cause, those cookies look really tasty!

  • that's so funny!! xD

  • chili? uuuu, just like the original chocolate that aztecs drank, xocolatl. but I dont like all this butter and sugar, its just another way to keep yourself with unnecessary calories and then sweat trying to burn them all! its just ridiculous, thats why I never add sugar in my chocolate tea. yes, there is a chocolate tea! but I dislike solid chocolate. I prefer that watery taste, caramel taste.

but I wonder how many shave hands. its not weird. hair keep falling out. I dont want it in food.

  • that flower mixture would be mighty tasty if used with fried chicken.

  • nice, should've broken one open to allow us too see inside.

  • Nice

  • Damn those look awesome! Can't wait to try and make them myself!

  • yea mother fucking sexist

  • I think these would be great with some kinda nut.. Thank You sir john.

  • looks good!!

  • they look like little crap dumplings but i think that it tastes good, ill make it someday soon, maybe this saturday and tell you

  • Comment removed

  • How does being a guy, who likes cooking, gay?

Are you assuming that only girls cook?

    How sexist of you.

  • ur right

  • someones immature. i cook too, and that does not make you gay

  • just because im hungry and want to make something does not mean youre gay

  • maybe your the gay one just because we know how to cook doesnt make us gay

  • no shit

  • Your wife should be a hand model. <3

  • omg

    i want some

  • Looks delicious, but is there a way to make this without the Kahlua? I try not to cook with alcohol.

  • don't worry, it's not like you can get drunk or sth

    the alcohol vapourises fully

  • Nah, some alcohol always remains. But unless you have some hardcore reasons to avoid alcohol altogether it's nothing to get worked up over.

  • agreed

(though i believe alcohol boiling temp. is about 80C, which means it should be gone while cooking )

    those cookies look gorgeous

  • I love the combination of chili and chocolate :) another great video, Chef John!

  • *drools*

    omg that looks delicious lolz

  • Chef John, keep it up.

I am sure u will teach the boring/stupid individuals that cannot understand why chili enhances the taste of chocolate

  • 0.o akward

  • Pepper in Cookie... ... Let's give this a try!!!

  • Yummy.

  • if i don't have that silicone thing that you bake with all the time, what else could I use instead of?

  • parchment paper

  • Made these tonight. They were very good!

  • Good one, Chef John. I've recently been wanting to make a desert using the same flavor profiles. Waiting for winter before getting into that level of richness though.

  • can u make these without the currants and they would still be good?

  • I made them without the currants and they were very good.

  • hahaha it looked so disgusting in the preview hahaha. realy nice

  • chili and gocolate goes pretty well

    hello chef John!

  • Sounds nasty

  • Could you use a substitue for kahlua? I am not huge on alcohol and vehementally against liquers.

  • Ive heard absinth should do the trick, otherwise try with Cointreau

  • Coffee?

  • this sounds soo good! reminds me of spicy peanut brittle from disney. its so delicious!

  • I still think chili and chocolate is mad weird. Lol.

  • It's the traditional way to eat chocolate you know.

  • hot cookiez

  • That bug had one bad day I can tell you that.

  • it seems Chef John has a thing for using pepper to enhance sweets

  • I made this recepie not to long ago and it was gone withing 10 minutes :-D Thank you .

  • I think it was a fruit fly.

  • i saw it :D

  • Wow I've never thought of something like this.

I knew things like coffee, cherry juice and vanilla are types of ingredients that enhance chocolate flavor...but pepper? How awesome!

    Sounds really fun ^_^

  • i tryed these and loved them!!!!!! thabks to both of u!

  • wait... no chiles??

  • Yum :)

  • looks delicious

  • Can't wait to try it! :o) Thank you!

  • Wow!

  • what are those cooking mats on the pan, silicon?

  • yes "Silpat Silicone Baking Mats"

  • thank you for the prompt response :)

  • I don't understand why people think this is such a strange combo! It's all about perception - just because we are used to certain ingredients being used in a certain way, does not mean that it doesn't work in others. People need to experiment more. I mean chilli is neither sweet or savoury just like cinnamon, but both work equally well in either sweet or savoury dishes.

Anyway, rant over - these look delicious!

  • Chef John, you REALLY put cayenne in EVERYTHING haha

  • ....weird. o.o

  • You guys make awesome some but I never have the ingredients. :(

  • "awesome stuff"

  • So go buy them :)

  • Buy ingredients? What the hell does that mean?

  • chilli, pepper, and chocolate?? doesnt seem like a good idea :(

  • Well, actually chili and pepper really bring out the full flavors of the chocolate and adds a nice tingle to the cookie.

  • You've obviously never tried it.

  • We will try to make this. Thanks for sharing, John and Michelle.

  • *wiki's currants" Oh, the berries used for Cassis :D I like the taste of that drink, so I bet I will like those berries~
