This is in Bangalore. Pav Bhaji is popular here too.Since you miss Pav Bhaji,may be you can try to prepare the masala at home using the the ready made pav bhaji masala available in grocery stores and substitue bread slices for pav if you dont get pav.
Is he going to roll balls of that into ladoos? If it's not for ladoos, I can't guess what it is. I can't think of anything that colour that needs to be cooked and mashed up. It looks like he is mashing it up. Maybe cooked sweet potato or yam?
He is mashing potatoes, tomatoes, green peas, onion, capsicum, butter and Pav Bhaji masala for the Bhaji to be served with Pav (bread) which will be fried lightly with butter.
