Ride an hour before you stop for Breakfast :) Stop early in the afternoon. Don't make it an endurance trial... Leave yourself plenty of time to stop and look along the way... and don't "plan" too much... Keep alert for unexpected opportunities along the way... and most of all... Make sure you have good gear and good rain gear. Embrace the weather... rather than fighting it.
