I really love ma7'shi (vegetarian ma7'shi that is, since I'm vegetarian, heh), it's soo tasty! We use tomato puree and water instead of just water, but I'm sure that this is just as tasty:)

thanks for sharing, i had a question but found the reply in ur blog post, my sister makes this all the time but instead of plain water she puts laban and ends it with fried garlic in olive oil on top, u guys should try it, supper yummy...
ps: this recipe is not to be confused with mahshi, they are 2 totally different foods with 2 different recipes

interesting variations to one of my all time fav recipes...
here is a third one:
after frying, me/mum usually add the fried zucchinis and the discarded inner parts of it (post drilling) to boiling spiced water (salt and black pepper, no garlic) and tomato paste for 20 min,
this way nothing get discarded, and you will end up with a hearty tasty tomato based stew.
@sherlock4life , Please refer to the info section on this video, go to my blog and read more about this recipe, it is Makhshi and not Mahshi..two different recipes using the same vegetables. this is not my own recipe, it is a well known recipe in the Levant.
Do not fray them and make a soup out of it . just put every thing in a slow cooker for some good five hours or so on low . thank you for the video i love them all. you got a good tast for the music as your cooking. from Egypt with love . :D
@khogaahmed , I do not agree to put them in a slow cooker and cook for hours on low heat! the zucchinis are delicate vegetables and it does not need too much cooking. just boil for 20 minutes on low heat and it should be done, especially if it is fried, you have done half of the cooking at least. you can also bake it with little oil if you do not like frying it then cook in broth or any sauce of your choice.

اذتكر سويتها بس الكوسه قليتها بشويتين زيت ماكان بنفس الغزارة وتنحط على طحينيه او لبن نسيت بس ماحبيت طعمها حسيتني افضل طعمها بالصوص الاحمر المسبك

Is this your own recipe because I have never heard of frying them before. Looks tasty. But it should be Mahshi instead of Makhshi. ح instead of خ
