  • hi i just had one question what flour did you use i know one is buckwheat flour but what was the other one if i may ask . i should say you did a great video on using the pasta maker . are this kind of soba noodle also the cold kind you dip into a cool bath after cooking it in boiling water .

  • @vampeve82 Hi, Actually I used buckwheat flour which I imported from Japan for this video. But you can use Bob's Mill Buckwheat. The flour is expensive but finely grinded and super-high quality. It's very good for Soba making. I usually add 20% of Gluten Flour to handle the dough easily with the pasta maker. After putting the Soba noodle in the boiling water for 1 minute, I move the noodle to a bamboo basket and cool it with the running water.
