Hi! I have found that soba noodles found in stores can vary a lot, to the point of being a different experience altogether. Since buckwheat does not hold well, it takes more effort to make a high quality soba that has a high content of buckwheat. What many companies are doing is to put more plain wheat in what they sell as soba noodles. Then they can sell much cheaper too. But the experience is not the same. A high quality soba has such a nice buckwheat smell and makes a nice broth.

Yeah, it is noon here in Japan. I'm doing housechores and sometimes check comments and reply. ^-^ I like SOBA because it has characteristic flavor slightly. I think the flavor is stronger than the other noodles such as UDON, RAMEN, SōMEN. And I like the SOBA TSUYU (dipping sauce) too. The sauce is mainly made from soy sauce/broth/みりん(sweet cooking sake). ^0^ Thanks for the comment! Have a good weekend!

@thekemosavyshow No! But both gold and money is written with the same Kanji, 金. NORMALLY, when it means gold, it is pronounced as "kin" / it means money, it is pronounced as "kane". But, sometimes "kin" means "kane" like the example "金一封 [kinippū]" in this video. But this doesn't mean we use gold as legal tender. This "kin" means "money=kane".
