It's called sports karate, which is only loosely based on self-defense. It's a sport just like gymnastics or football and has many of the same benefits as those. Plus, most schools teach self-defense in addition to sports karate. You need to search on martial arts self defense to find what you are looking for.

Forms such as these have no practical application. I can bet that she didn't learn what part of the forms were blocks or counters. Her instructor probably taught her each stage of the form without telling her anything. There is something to be said for breaking the moves down into what is useful, when.
