  • And they don't really need to use their hands in order to see whether or not the milk has coagulated enough for cutting - They could just use a technique called "the golden cut" where they make a cut in the coagulated mass and then lift that cut to expose a "wound" like area in other to see if the consistency and whey separation is just right for cutting.

    Dairy workers don't want coli in their cheese as it will destroy them (develop too much CO2), so believe me: Hygiene is their top priority.

  • They can use the whey either for food for farm animals or they can make protein powder out of it.

  • @NinkaPanda Eh, considering that cheese has rennet in it, I'm not terribly afraid of the dirt on the guys' hands. But yeah, I am surprised to not see gloves. Maybe Europe (or Italy) has different regulations?

  • @NinkaPanda The reason they aren't using gloves is because they needs to be able to "feel" the consistency at certain temperatures and certain parts of the process. It's almost impossible to do with gloves.
