@sandrodream1 you can't call it parmiggiano reggiano unless its made from the exact process for making parmasiano reggiano the one originated from parma other wise its just parmasian cheese

And they don't really need to use their hands in order to see whether or not the milk has coagulated enough for cutting - They could just use a technique called "the golden cut" where they make a cut in the coagulated mass and then lift that cut to expose a "wound" like area in other to see if the consistency and whey separation is just right for cutting.
Dairy workers don't want coli in their cheese as it will destroy them (develop too much CO2), so believe me: Hygiene is their top priority.
