Also I've always thought the little tree things in WW are probably Kokiris since the guy with the violin's spirit resembled THAT of a kokiri. Maybe they evolved into trees or something?

The Kokiris are left out due to the fact that they weren't exactly a race that welcomed visitors, they were peaceful, yes, but they preferred to stay hidden and never leave their forest because if they did it was said that they would die. Plus everyone that entered the forest would turn into a stalfos so people preferred to stay away and nobody heard or talked of the Kokiri since OoT
