Um you overcooked the squid thats why it is rubbery. Seafood cooks fast. Also that thin layer of skin on the outside i do believe you can eat that.

Info I got an squid is cook no more than 7 min. or more than 30 minutes, otherwise it's tough & chewy.

I'm afraid of cooking a standing roast. That seems like it requires special tools & knowhow. Am I right or should I try it anyways?

Jeez, if the squid smelled bad before it was cooked then it was not fresh enough.

And squid cooks funny. Cook it a little and it is tender. Cook it longer and it gets tough. Cook it even longer like in a stew and it gets tender again.

I enjoyed watching and I eat like a 5 year old and cannot cook at all, although I did eat squid in a New York restaurant (do not remember where or what it was called) and as I recalled it wasn't half bad, and the texture was not leathery at all. It was tender. Perhaps it was cooked too long.

I did enjoy the dissection very much and your video kept my attention throughout. Very creative! You should be on National TV.

one of the most interesting and common dishes where i live (Basque Country, north of Spain) is "squid in it's own ink". everybody likes it, it's delicious.
