Coq au vin is not southern. it's a classic french dish usually using burgundy wine, bacon, mushrooms and other things like stock , mirepoix and the like. of course when in france, every region has it's own variation on a dish. especially something like chicken braised in wine. the names of the dishes depend on the regions as well the wines used in the cooking ie. coq au reisling is made using riesling wine.
