An analogy would be like if you need something, you can borrow it from your neighbour. This works only if that neighbour bacteria has the relevant information. This explains why in a colony of bacteria, if one bacteria gains the resistance, you can generally expect other species to become resistance eventually due to genetic information exchange.

@themainmanj an old post, but in case you are still curious, a bacteria can gain the information by taking up genes from another neighbouring bacteria. An analogy would be like if you need something, you can borrow it from your neighbour. This works only if that neighbour bacteria has the relevant information. This explains why in a colony of bacteria, if one bacteria gains the resistance, you can generally expect other species to become resistance eventually due to genetic information exchange.

Evolution also doesn't work by converting parts into new parts like fur to blubber as you imply. Blubber, by the way, is essentially just a layer of fat under the skin, so its not exactly "new material" (whatever that's supposed to mean).

Anyway, as a living thing adapts to its surroundings, certain genetic traits make it easier for it to survive. These traits are passed onto their young. The organisms without these traits died off and did not produce offspring. Therefore, what is left is better suited for is environment.
Give this enough time and environmental change, and the species can become something totally different than what it was before; an entirely different species.
