In the first game Jak is innocent and so doesnt talk, in the second game Jak was tortured with dark eco that corrupted him and and so now he talks. Also Jak was born in the future of this games time and so when he meets himself later the young Jak is still innocent, he will be hunted by his enemies for being the prohecied hero and so goes back in time for protection. Dark eco Jak continues his adventure in the time he was originally born in.

Jak isn't "innocent" he may be good, but he's not that, in fact, Jak disobeyed samos' orders not to go to Misty Island, that in itself was bad and that was how the first game started, innocent doesn't mean good, it just means that he hasn't done anything to make him one or the other.

Throughout the games, Jak is made to suggestively injure his rivels when out in the wasteland, hijack zoomers and even kill to survive, by definition, that's not innocent.
