Yuck, who taught you to make fajitas this way? You definately did not learn to make fajitas in Texas. Fajitas are not cooked or served this way. You never cut your meat before cooking.
Your fajita technique is cool. I'm a bit more elaborate. I like to bag marinate the meat strips in some oil, spices, lime juice. I like to warm the tortillas. I like to put a little shreded cheddar in there with the onions/peppers. I like the avocado on the side with some sour cream.

i like the way you cook with tongs instead of spatula.
i've tried it. it makes turning and stirring so much easier.
and you are also using it to pick up ingredients and seasonings... instead of using hand. cool!

u cook it faster and maybe even get more seasoning on the meat because it would a lot more surface area
