    Try trussing the stake with butcher's twine. Or get a thick long (at least 2+ inches long) sewing needle and put butcher's twine in it and roughly sew the open part. Watch out to not to pierce needle into your fingers :)

  • As an added tip, soak your Bamboo shoots in water or apple juice for added flavor. They should soak for 30-40 min. This will prevent them from burning onto the steak so you're not eating coal. I like to mix the oysters with some Soy sauce beer and lemon. this brings a lot of flavor.

  • Now i like oysters and i love steak. And im not knocking the idea of putting the two together, but in all honesty the "carpet bag steak" has to be one of the most visually disturbing dishes iv ever seen. It looks absolutely disgusting, if i ordered it and what i saw on the video was brought to my table i would have a hard time convincing my self to try it. Even though it may taste great the look and id imagine the texture of slimy luke warm oysters stuffed in to a steak are a Huge turn off.

  • @Swuppo there is still enough fat to do the trick, and cooking for a more rare steak, the excess fat wouldn't do alot for the taste.  just my thoughts.

  • Well first off I love you guys! 2nd why do you trim off the wonderful fat? Those werent fried oysters you did they were pan seared. Looks great to do the pocket but if you poured oysters on the top why does it matter? Why would u add sugar to this recipe yuck, thats for ham and pork.

  • Ok, just throwing this out, but instead of just stopping with oysters inside the pocket, why not add some mushrooms and shredded cheese? I have done the cheese and mushrooms before and it was great., but.. add the oysters and you have a meal fit for a KING, or at least a truck driver... lol.. Keep them coming. The grilled shrimp and steak k-bobs turned out PERFECT.. keep it up... Doing great in Central Texas...

  • My family spent every summer vacation out on the Washington coast south of Forks at a camp ground called Kalaloch.

    We used to go Crabbing, Smelting, Surf Fishing, Clamming for Razor clams.

    We would come back to camp and boil up a huge pot of Dungeoness crab.

    Mom would make clam fritters.

    Dad would clean and fry up a load of Smelt and sea Perch.

    FORGET SEA GALLEY...

    Man, Those are some fond memories!
