U need to protect the whole city.

Build defenses Traps and Defensive Trebuchet etc.

Build Troops Siege weapons archers heavy cavalries etc.

upkeep is where you have troops eating your food, if you want troops, you need to feed them. either make more higher level farms, or dismiss your soldiers.
