  • Deglazing is the best way to reclaim those tasty bits stuck to the bottom of the pan. Scraping any coated pan will ultimately damage the coating, even the most expensive ones. Making a rue to start the gravy process will yield the best taste and consistency; consistency being just as important as taste. My grandmother would put a small amount (half teaspoon) of the morninngs coffee grounds in the rue as it was cooking. She grew up during the Depression, the meals she cooked were great!
