@KatiushaVN4 wrong. chinese takeaway is greasy since the menu is made to fit for western tastes with msg, colorings and preservatives. Chinese food through steaming has no grease whatsoever. Same if u refer Mcdonaolds as western food. It is not the same.

The chinese consumption of oil is in fact far less of that of American and British which their diet is filled with fried/roast chicken/steak and chips let alone they also binge on cheap takeaways. An average chinese dude would eat healthy thats why they have better skin and don't suffer obesity as much.
@BustyGretchen don't know if you're still trying to find out about this. if you put it directly on the steamer, the skin of the dim sum (thick skinned dumplings, shrimp dumplings or har gow) will more likely rip when you try to pick it up. if the filling is fresh, then the dim sum won't taste as juicy if you rip the skin. if you don't have the film/paper, you can substitute with thin layers of carrots instead.

Dim Sum cooking is totally in a class of their own which even regular chefs typically can't make. Okay, the simple ones like wonton, gai lan (vegetable dish), etc. are easy enough for anyone but most dim sum are very difficult to do like the har-gao (shrimp dumpling). Those take a different kind of skill set.
