I guess the Ewoks didn't completely win the battle themselves. In a way, Chewbacca helped turn the tide by manning the walker with the two Ewoks so they could turn the Empire's weapons on them. If you watch the whole battle, the Ewoks are starting to lose when the walkers start firing on them and causing them to flee. But thanks to Chewie, it turned back in their favor.
From what I can make... the Ewok say's "Pus ka na!" which also means "Tapos ka na!" somewhere between 1:52 - 1:55. This roughly translates to "You're done" or "It's my turn" in english from tagalog, which is understandable because Ewok wants to pilot the AT-ST, striking the Wookie pilot. YEEE! FILIPINO REF'RNCES!!

The Empire must have recruited wimps to be their AT-ST pilots. Two grown men, a pilot and a gunner, wearing full combat gear (helmets, gloves, boots, etc.) inside a locked armored vehicle get jacked by a couple of pint-sized Care Bears and an overgrown, walking carpet. No wonder the Empire crumbled after the Battle Of Endor.
