You forgot to put a Drip Pan with liquid. The internal temp should be 190 degrees.
Cover it with aluminum foil for 30 minutes. Also when you put in the Plate Setter, you want the Dome Temp to go back up or you might as well put the Plate Setter after lighting the EGG. Instead of chips, use Wood Chunks.
Hi, I have a question regarding the BGE lump charcoal. Do you find that the peaces of lump charcoal are mostly small peaces like smaller than a kingsford briquette? I dont buy the stuff because here they sell for $30 for 20Lb bag. I was told that there coal is actually royal oak-nature glo hickory and oak natural lumo charcoal. So I buy that brand here for $17 for 40lb bag. Very good stuff, almost no ash left over burns long and not that hot( at least not like mesquite). But the peaces are small
@Ab82photog BGE lump is decent sized. I get it for about $20 a 20lb bag. It burs well and lasts a long time. There are some other good lump charcoals out there. I'll check out the Royal Oak stuff and see if I can try it out.
The Big Green Egg is a very efficient cooker. You don't have to add any char coal, the fire will last for the duration of the cook with coal left over.
While that looked good, What was your goal, Pulled Pork?
If you were making pulled pork then you did not cook it long enough a 5# boston butt will take 15 to 18 hours at 225 or so and should reach an internal temp of about 195. It should also form a nice tasty thick black bark on the outside.
If you pull it off when it hits 165 which it looks like you did the pork never finished the Collegian to Gelatin conversion phase which just starts to begin at about 165 and can take 10+ hours to complete
