Actually, we are talking about microscopic burs that act like a serrated edge...they work quite well. And the chef has recieved his worse cuts from extremely sharp knives. Admittedly ,once was after he was poured a drink after a record setting night in a top restaurant.

When you sharpen knives, you DON"T want burs on the edge, they fall off and then suddenly your saw is blunt. You want to polish your knife with a steel or a diamond steel.

Also dull knives are more dangerous than sharp ones because you need to exercise more strength to cut- therefore the knife has more force behind it and is more likely to slip and cut you.

The tool is designed to cut - If you know what you're doing it will serve you well. If you use it irresposibly you will hurt yourself.

BUT if you know what you're doing with a dull knife (or an inadequate tool), you may injure yourself even though you were doing everything "right"
