there's guides everywhere, basically let it cool gradually without letting it be disturbed (don't shake it or let it come into contact with anything other than the bottle so it doesn't crystallise)
the loiquid has to be below freezing, but still be in liquid form. you can do that if everything is still when its freezing, so no movement at all. then you can just bump it and get the molecules to bump into each other and they freeze together, and it starts a chain reaction thus freezing the whole bottle like so. its pretty easy actually

mine keeps freezing around the edges, then eventually the whole thing in 30 minutes, its solid!

I believe the shape of the container is important. Fiji water's container has almost no ridges.
