@1TacticalMedic I've cooked the turkey both ways and it comes out good either way. If I'm cooking it breast side up I'll put some foil over the top of the bird about halfway through the cook and it comes out fine. Hope the bird came out well!

This looks awesome. Got a 20lb bird and the brine is going. One question; I have a vertical roaster. Any change in cooking plans as compared to what you show, if I use that gizmo?
@blockyhoo Definitely. The oven would work fine. You won't get the smoke flavor but the brine will come through very nicely. Let me know how it turns out!

If you want to make things a little spicier next time you might try mixing up a dry rub of salt, pepper, chili powder, garlic powder and some hot pepper powder. Experiment with the ratio of ingredients until you find a mix that you like and then insert the rub just under the skin of the bird. That way the spice mix will soak into the meat while cooking.
@opretpally You can give the turkey a quick rinse. The brine solution will have gone into the meat to help make it more juicy so rinsing it won't hurt.
@opretpally I would rinse it well because of the sugar. Sugar can easily burn and give your bird a very dark color. This is why they recommend putting bbq sauce at the very end of cooking time due to the sugar in the sauce.

Just want to say that this years turkey has been the best we have ever! had. So glad I found this recipe last week. The Brined turkey was fabulous!!!, never had one so moist and tender. Usually stay away from the white meat because of the dryness. Not this year. I have to wonder how salty the final product was. Even though you cut the salt in the brine to 1/2 cup, 24 hours is a long time for an enhanced bird. Also, I think you need to rinse that sucker off when it comes out of the brine.

No, there shouldn't be any difference. Just monitor the temperature to make sure you don't over-cook it and you should be fine. Enjoy!

Actually, the Turkey is not that salty at all. It is, however, very juicy and has a great smoke flavor as well.
