BTW - if you have a Trader Joe's nearby they have terrific frozen wild salmon. If not, ask your fishmonger. Wild costs more but tastes better and is better for you...
You are so right, Sherrie. Add a few aromatics such as chives, lemons, garlic for a flavor boost and even chopped veggies such as celery, carrots, spinach - and you have a delicious and easy meal!

Wild salmon is the way to go if you can find it... Farmed fish has it's issues - you touched on a few...

I used to cook my salmon in foil a lot, but now I don't because aluminium (spelt aluminum in the us) is extremely bad for your health.

Consider using parchment paper instead - works just as well and makes for a beautiful presentation.

I have cooked with foil before and it really holds in the moisture. The results from cooking in foil result in a fantastic meal.
