I am Turkish, entire point of doner being vertical is not letting fat burn by dipping into fire and give it a bad smell, it is also unhealthy. also you not just can cut meat while cooking, you should, you burned the outside of it, that way you can get your slice before it dries. It is a good start but find an electric one that can be used vertical, and also use more fat, put it between layers, you can also mix with some beef to lessen the lamb odor if you wish.
I thought the bread is cut to form a pocket, that the meat is placed in and then the salad garnish on top (which is what I am familiar with)... IMHO the end product looks more like a 'doner burger' than a 'UK-style kebab'.

I think this is more because they're usually only cooked around the outside and raw juices run out from the centre into the cooked meat. This would be especially important for chicken kebabs

We made some Greek style Gyros the other day from deer meat, mixed with fennel, etc. Served it on some Naan (flatbread) and it kicked ass!
