    Toughness. Especially on flat and hollow grinds, they have to have a secondary so they won't chip or roll. Otherwise there's not enough steel behind the edge to make it usable. Very high and thin ground convex grinds can do ok if they're heat treated right without a secondary but it doesn't hurt to have one. Any convex lower than a full height convex really doesn't need a secondary unless it's a big chopping knife. In that case it's a good idea.

  • Very cool and informative vid, Iz. I sharpen on waterstones, but the knives I make almost all have flatground bevels. I'm starting to appreciate the convex grind a little more.

    No water, I just use it dry.
