Well i like the texture of the frosting just I think her tools she is using for the outcome she is wanting are not helping her she needs beeter tools and we should always do the best even if the cake is going to be covered with fontant thank you
Its better to put little pieces of wax paper/parchment paper underneath the edges of the cake. That prevents the serving platter from getting dirty. And once you've finished frosting, you can slide the wax/parchment paper right out, leaving you with a clean edge. :)

@flwer34 Not everyone puts a crumb coat onto their cakes. That's why she kept mentioning to 'dallop' or 'glob' the frosting on, and to always lay frosting on over where you left off. If you do apply a crumb coat, I recommend cooling your cakes overnight after coating those crumbs ; ) It will help the butter cream set so it would be more difficult to mess up. -As long as you apply slight pressure when you apply the frosting.
Specially in the episode when they did the world's biggest cupcake. The work in progress was completely horrible, but the final product was absolutely beautiful.

@artpro6666 well for one thing you shouldnt put a layer of sugarpaste onto the cake and THEN cover it in fondant, sugarpaste is ment to be for decorations, she might as mell covered it in royal icing and THEN covered it in fondant! wtf didnt she use buttercream like any other person who has the SMALLEST amout of knowledge of cake making? and secondly, thta is suck a rediculuos amound of what SHOULD be buttercream to use before adding fondant! that is tooth ache and 1 stone in a slice!

1. Place some wax paper under the cake to keep the platter clean, when done,pull it out! Minimal fixing required & it looks cleaner
2. Do a crumb coat! I.E a VERY thin coat of frosting then place in the frige minutes so it can "harden" THEN frost! Duh..
3. When done take a Viva paper towel and *LIGHTLY* place the towel over the frosting and using a gentle hand smooth over the towel. PERFECTLY smooth cake. (Must use a butter cream frosting)
ya know, not every where in the world sells viva paper toweling. Other than that after your butter cream has crusted you can do the same thing with parchment paper and a fondant smoother (taught by pastrie schools world wide)

yes, but the trouble w/ pulling the wax paper is that when you pull it, it can pull at the frosting and expose some cake too. either way has its ups and downs i guess
