First off, that weapon on their back is called the Infinity Judge, but there are others you can equip. Google is your friend.

Anyways, once you bought/gained new equipment, simply go to your main page and there will be the options of either tools or equipment. Go to equipment. Now select which one you want and itll ask you which you want as your main. Main will be the one that Ammy carries on her back all the time and sub will only appear during battle to assist.
