Japanese don't eat fresh hokke because they know Anisakis quite often prasitizes in it. They freeze it or cook it with heat thoroughly to kill the parasites as yuckypeas mentioned above. It's not gross at all if you eat pork and other meats as similar things are happening in these meats too.

I remember discovering for the first time a bunch of worms while gutting a lake whitefish. It was pretty gross to see them all slowly wiggle out from hiding. I think I threw the fish away. This reminds me of the time I was eating a chocolate bar and found a live worm in it. It was a sealed candy bar! T_T

Thx for tip to freeze. It was first time to encounter worms, and had no idea what to do. I don't like to waste food or anything else, so I felt terrible!

Yea no problem, when i worked in sushis the chef always said to me '' always freeze the fish or you will have big worm in your intestine '' lol

i remember cooking tilapia in a pan and minutes later worms just pop out of the fishes skin, makes me :P

No - this is NOT hoki (the McDonald's filet fish) its hokke - a Japanese mackerel. Look it up on wikipedia: Binomial name
Pleurogrammus azonus Jordan & Metz, 1913 The Arabesque greenling (Pleurogrammus azonus) is a species of mackerel used in Japanese cuisine.
The primary population of the fish is found off of the Sea of Okhotsk. According to legend, it was discovered by Nichiji.

Those worms are nemetodes from the genus Anisakis. They are very common in fish, especially saltwater fish like cod and pollock. In seafood processing plants these nemetodes are usually picked out of the fillets before packaging, but you can't get them all. Cooking to the proper temperature will kill them, but improper cooking won't and if eaten they could cause a condition called Anisakiasis. Cod and pollock are the main ingredients in breaded fish sticks throughout the world.
