I don't believe in ghosts, nor am I religious but I do know (from past RE lessons at school) why there are no cow ghosts. According to the bible, God breathed the "breath of life" into humans and not into animals. This breath of life is believed to be the soul. When one is said to turn into a ghost it is their soul that is "seen" to be wandering, not the person. No soul=no ghost. If animals don't have souls as Christians believe, then they can't have ghosts. Again, I don't believe either myself.
