I said that the better player uses the "King general". It has nothing to do with playing sente or gote. It's all about "King general" or "Jewel general".
Usually in a title match, they switch sente and gote from game to game. For example, the champion plays sente in the 1st game, the challenger the 2nd game, the champion the 3rd, and so on. They should definitely do that because they wan to make the title match to be in an even condition.
Sorry about the moves being too fast, but when I "flow" the moves fast, it means those moves aren't very important as they're just simple procedure sequences. When it's an important move, I always make comments on them as much as the time limit allows me to.
As for the thinking time in Meijin title match, refer to Lesson#23 of my "How to play Shogi" series.
