Julie, learn the difference between the meaning of the words "healthy" and "healthful." It is ILLITERATE to say "healthy foods." Make that "healthful." For your information, "healthy" means "having health" and healthful means "giving health." Hence, only a life form itself (while still growing, not after harvest) can be "healthy." Anything which makes one healthy is called healthful.
Yes to a certain extent. You wouldn't want to cut them too small as it's helpful to have a decent amount of culture available (I wouldn't go smaller than maybe a 2" diameter circle or the equivalent). Don't use metal to cut the culture though--if you have a plastic knife or can rip it with your fingers though, that should work.
