Can I replace the rice vinegar with something? I was scared regular vinegar would make it taste sour so I just used the salt and sugar but it almost tasted like Russian oatmeal
@un0m3asa13ah It won't be too different, you'll just lose that nice hint of extra flavor it gives the rice. Luckily, the vinegar is not meant to stand out, or be the center flavor of sushi. With a side of soy sauce, it especially won't be as noticeable.
@Ketchme17 I just added a little salt, and it didn't taste any different from what I'm used to lolz. My boyfriend thought it tasted even better than restaurant sushi! :D
Watch vraymond02 if you wanna make decent restaurant quality rice, its pretty much the same method i was taught and its the way i would instruct a new chef how to do . He goes into details about washing, cooking and mixing of the rice that are very important in getting a good result.
You should always wash rice till the water goes clear use a rice-cooker to cook your rice and when mixing the rice use a deeper container always use a rice paddle with a cutting action when mixing make sure each grain of rice is coated in the sush zu (why does he have a silicon baking mat in bottom of the tray). If you plan on making sushi rice regularly you should invest in a Hangiri for mixing and storing of the rice. As a person who made sushi for 6 years this is horrible to watch.
@YouWereThinkingItToo That type of short grained sticky rice (in this case it's most likely Japonica rice) gets its sticky and fluffy texture from cleaning it (and usually massaging it while doing so).

Okay. The sushi is perfect. The rice however must've tasted horrible. YOU NEED TO WASH, RINSE x 3, THEN SOAK FOR THIRTY MINUTES. YOU DO NOT JUST RINSE IT THERE. But since you are not asian, i give you a kudos for nearly perfect rice.
