Bach made more than the cantatas we know today. They guess that there are at least 50 or 80 more that got lost after his death. So it has nohing to do with a 3 years cycle (and by the way: the Lutherans use a 7-years cycle).
Secondly: of course he was Lutheran. He had a strong faith in God but was known to be very headstrong and sometimes stubborn. If he had found his belief in the Catholic Church he would have gone to South Germany.
A great performance. It is difficult to find a live performance of the "original" sinfonia, although it is popular among organists via transcription (not by JSB). FYI the original original, written ca 1719-20, was the "Preludio" from BWV 1006, partita for solo violin, which Bach did transcribe completely for the lute (1006a). Abt 10 yrs later JSB orchestrated it for BWV 120 and the final version BWV 29.

2) Bach's cultural environment was opposite to some art like this.
