@SleepIsMagic Boililg is necessary to kill the bacteria that naturally come on veggies. This bacteria will still live in the freezer. Canning is more harsh on the veggie nutrients but it is a much safer investment since the electricity to run you freezer can go out and cause total loss for the product and all that hard work. I purposely grow enough to last me at least 1 year.
I do corn that way only soak in ice water after boiling. I did freeze some squash last year and found a way to do it using the microwave. It was very easy, did not taste like fresh picked though. lol Should try it your way, thanks for sharing.

Thanks for sharing, I am going to try this. Would you do a sweet squash that way too? I would love to see more ways that you preserve garden vegetables and fruits. I just started gardening this year and I have lots of extra cucmbers. My large tomatos are starting to ripen. I also have okra, garden peas, and green beans that I might want to save some of. Did you try your tomatillas and how do you like them. I have never tried those and thought about planting some next year.
@Calliedollpie If you are talking about butternut squash or some other type of winter squash (by sweet squash) those types of squash need to be fully cooked before freezing them. (Do not try to can squash... they have characteristics that create gas that make it very difficult to get a proper seal for the jar).
@Calliedollpie I make pickles with the cucumbers, can and freeze green beans and Okra, I can my tomatoes and make salsa, spaghetti sause and tomato soup with my tomatoes, I never have enough peas to "put up". The family and I eat them like candy.
I believe the tomatillo's are a failed project for me... I have't seen a single fruit that stayed on the plant! they all fell off?

I steam my squash as if i were going to eat it right away then freeze it. The texture is much better.

Other ways of using up your Courgettes (Zucchinis) is to make Chutneys, Ratatouille, or Courgette Loaf. Thanks for sharing.

If you douse them in ice water after straining they won't get overcooked and will remain firmer. Blessings!
