  • Thank you so much, red velvet cake is my favorite layer cake. This is the most authentic red velvet cake recipe that I've seen in years! It actually uses oil in stead of butter! I once watched a baking challenge show on tv that involved red velvet cake, and one of the contestants actually said that red velvet cake is just chocolate cake with some red food coloring. I couldn't believe that she said such a thing... she is a professional baker, I thought she would know better.

  • @pernanjp You're absolutely right. Red velvet cake is so much more than just chocolate cake with food coloring. And although I have made versions with butter, I think the oil is part of what contributes to the right texture. You didn't mention the icing -- I know the cream cheese icing isn't authentically Southern; most Southerners use a boiled icing. But I like the cream cheese. What about you?

  • @AboutCookingMom And I'm not even speaking from baking experience, haha, just eating experience, and reading. I haven't had any in years, but even before I knew a thing at all about baking, I knew that red velvet was unique. I bake a lot, but never have actually made red velvet. Over the years, I've read all about what makes red velvet what it is, and I don't see how even someone who knows nothing about baking would not recognize its uniqueness..

  • @AboutCookingMom Oops.. With the extra chattering, I forgot to answer your question.. I didn't mention the icing because I didn't think about it. When I think about baking, I don't put a lot of thought into the "dressings", since icing is not an essential part of a cake, it didn't pop into my mind. But anyway, I much prefer cream cheese icing over any icing for most cakes. I'm a little sensitive to the sharp sweetness of icing, and I think cream cheese icing smooths that over.

  • Hey , I know it must be really annoying to respond to all these subsitutions but i need to ask ... Can I use all-purpose flour instead of cake flour ? I used another recipe with all-purpose flour but i just wanted to know if it would work with this one ! :p

  • @cutiechloe12345 Yes, you can. Just sift it before adding it to the recipe. The cake flour is just a little lighter, but the recipe will work fine and the cake will still taste great. Good luck and let me know what happens!

  • @xXJFNeRXx Ideally, you want to use buttermilk. But if you don't have any on hand, mix whole milk with 1 tsp. of lemon juice or vinegar. That is in addition to the other vinegar called for in the recipe. Good luck!

  • @lovingkimmy99 Yes, the vinegar is one of the ingredients that makes red velvet cake unique. Try it - you won't be disappointed.

  • @3000Crystal Why stop at red if it's just food coloring? How about blue, or green mix red and blue get purple, mix red and yellow get an orange one ,yellow mix green and yellow get a yellow green color. so you can ahve a velvet cake any color. Mix blue and green get teal, mix blue and purple indigo, yello and orange marigold. so why stop at red velvet? endless colors all you need is imagination.

  • @Liishax3iiLy Not really - but if you want to try this substitute, it might work: For each egg, beat 2 Tbsp. water with 1 Tbsp. water and 2 tsp. baking powder.

  • @323aye There isn't really a substitute for the cocoa powder. It gives just a hint of chocolate flavor to the cake.

  • It should be buttermilk -- the acid is necessary for the recipe. If you only have regular milk, add 1 Tbsp. vinegar or lemon juice to it.

  • If you are not a fan of using food coloring, you can just leave it out. The acidity of the buttermilk and the vinegar will actually make the cake turn red. It won't be a deep red, but it will be a shade of red. In the South, it was actually first made without the food coloring. That or you could use beet juice :)

  • @amberlu87 Well, it's funny you brought that up. I've actually tried a number of different ways to get it to turn red without the food coloring, including adding beet juice. The batter will turn red, but when it bakes, it will be light chocolate color. Either way, it's delicious!

  • @melenakelly1999 Yes you need the cocoa powder!!! and Yes, it does need to be the cake flour. You can make your own if you have cornstarch. Add 2 level TBS of cornstarch to a 1 cup dry measuring cup. Then add AP flour using the scoop method (Stir the flour with a spoon to make it fluffy, then scoop by the spoonfuls into the cup. Fill to the top and level out with the back of a knife). Dump into a medium size bowl and stir with a wire whisk until well combined. Now you have cake flour!!! :)

  • @bitchplease2001 Some recipes say to add the coloring to the cocoa, but to get an even coloration in the cake it's better to add the cocoa to the flour and the color to the buttermilk.

  • Yes, the liquid food coloring. You can make it look pink if you use less food coloring. You have to use the full 2 oz to get the red color. Experiment! I'm not a fan of food coloring, but once in awhile, I figure it's okay.

  • what kind of food coloring are you using? is it simply the liquid one? i made this cake a lot of times, but it looked always like a pinky brown :(

  • You are right - it is. But when you sift it again, it adds air to the cake, making it lighter. If you're in a rush you can skip this step, but I find it makes for a more tender cake.
