  • I can't believe you have automatic salt and pepper grinders but you don't have a $10 electric hand mixer. = ) Too funny. Thanks for sharing this recipe and method, mine are always a bit too dense (but I'm Italian, so whaddya want?!) and the aeration makes perfect sense.

  • It's just as easy to crack the egg, carefully pull it apart with the opening on top and allow the white part to fall into the bowl. Pour the yolk into the other eggshell to allow more of the white to separate. Then you hardly have to touch raw egg at all.

    It helps to crack the egg over a small bowl (like a glass custard cup). It will be easier to get out a piece of shell or yolk which gets into the white part. And it's the kosher way to check an egg. Blood is not kosher.
