  • @Odelightful1 Paneer has no flavour except for plain milk flavour. You can add it to anything and it takes that flavour :) hope that helps

  • @sinarafelix hi this is vasu here i can tell u one more technique if u roll a chapti roller on ur paneer put for 10 to 20 min in frezeer u get a bettter shaped paneer,

  • Thank you! I too tried making this last night and I did not add water to my lemon juice, so I got like maybe 1/2 a cup of cheese which resembled ricotta cheese more than paneer.  I will try again and I hope to perfect it.

  • @Manjulaskitchen Lemon juice added to soy milk will turn it in to tofu (recipes on YouTube) which I sometimes use as a "paneer" substitute.

    You can use soy milk but the result will be Tofu. That's also nice. :)

  • @pricofilipinaamerica Although I have not made paneer before, I have made vegan "cheese" out of tofu. You may want to look up a recipe for a soft vegan cheese with a bit of lemon juice and use that for paneer. Either that or make soft tofu out of dried soy beans, and add lemon juice as the coagulant.

  • @geetapriyadarsini1 it is the percentage of fat in the milk ...In shops you will get different fat percentage milks...usually 0.5%, 2%, 3% or 4% etc ...u can find it on milk packet or box

  • mmm i just made paneer today i made it in to paneer makani it was so good i was surprised how easy it was i used all of my lemon juice and it still hadn't changed

    so i mixed some citrisic acid with water and it changed so fast once it got 2 the right amount of acid i used 2L of full cream milk juice of 1 lemon and a bit 2-3 tsp's of citrisic acid with a bit of water and got about as much paneer as in this vid

    i am currently living in sydney...and the milk that we get here is different like cow's milk whole/light /skim etc but not the one which you were saying in the video(2%milk).Hence i would like to know what sort of milk is that and if i don't get that 2%milk,then which milk should i go for and how much pure it should be? like if i go for cow's milk then which one should i buy ...whole milk with fat or light milk with less fat or skim milk no fat.

  • @anukanji While I do not reside in Sydney, and I know your question was directed at Manjula Aunty, I may have the answer you desire. Whole milk is 3.25% milk fat, low fat is 2%, light is 1%, and skim is 0%. These are U.S. standards, however, being that the U.S. also uses the terms whole/low fat/light/skim, I am led to believe that the percentages will be similar in countries that share this terminology.

  • What is the meaning of 2% milk? Are you using whole milk or low fat milk?

  • @thinkcat01 milk is categorized by the levels of fat. 2% is one step from whole milk so it's definitely not skim (low-fat) but still isn't as thick as whole.

  • @1024rebel: For one litre of milk I used to add one table spoon of vinegar. The milk curdles fast with more paneer.

  • I have just made my first batch. I used some dry milk powder as well since I saw it on another receipe, however the bottom of my pan was thick with dark solids. I guess I have to try a different pan, like you suggest. Thank you! I will now make green beans w/ paneer tomorrow.

    Milk powder burns easily, try without milk powder.

  • Thanks Auntie Ji...My mother used to make quick paneer by using only one spoon of curd. But I dont know why in Canada this formula was not working for me. I was in big trouble as milk was not properly coagulating. I was thinking to call my mother. Then I saw your video, Now I added lemon juice. Its ready now. I have invited my Canadian Friend for dinner and I will cook Shahi Paneer for her. Thumbs Up to you :)

  • hi, i tried to make panner, it turned out to be great, however i can only use this panner for bhurji, I would like to make it the way it is sold in market on dairy's, is that possible? Dairy paneer has more lachak and it does not break as easily as the one on this video any tips?

  • @juliandunn you can also use whey to soak your lentils, beans, chick peas etc overnight...it helps to break them down, making it easier to digest.

  • I tried this a few minutes ago with 2% but the milk only separated into very tiny bits and pieces..I added a little more lemon juice but it didn't seem to do anything for it. I guess it only works with whole milk?

  • @auotaku You may need to use a bit more lemon / lime juice or distilled vinegar. The whey (watery part) should look pale greenish as Manjula shows in her video.

  • Hi Manjula,  Thanks for this. My cookbook instructions for paneer were defective and I thought I had a failure. Someone told me to look at YouTube, and there you are, showing the correct way. I went back, reboiled the milk, added more lemon juice (and water) and voila! I have paneer. Now I am wondering what to do with the whey left over. It tastes very good, but I wonder if you just throw it out, or have advice on what to do with it. Thanks.JAM

  • I made paneer today so I could make palak paneer for dinner. When I tried to fry the paneer it melted. Which confused me because paneer doesn't melt. I have no clue what I did wrong. I don't suppose you would know what would cause it melt?

  • @whysalmon It's just like ricotta cheese. Persians have been using this recipe for thousands of years. We like to pair the paneer (after it's chilled) with walnuts and raisins. Serve with mint tea and you will be in heaven.

  • I found a website that uses buttermilk to curdle the milk, rather than lemon juice or vinegar. 1 quart (1 L) buttermilk to 1 gallon (4 L) milk. I haven't tried this version or the buttermilk version, yet (The Indian guy who showed me used vinegar), but will probably try the buttermilk version soon. Have you ever tried it using buttermilk?

  • @leiatyndall Traditional recipes (by traditional, I mean the recipes dating back thousands of years in Persian history), have been using the stomach acid from a goat. As gross as it sounds, it's no different than any other acid you use. Since milk is a base, you can use any acid to make it seperate. Anything from lemons, vinegar, cider, etc works.

  • Manjulaji, I have wondered how the restuarants get such a smooth finish. Suppose, after we wash the paneer off the lemony taste, I were to knead it and then flatten it out into a rectangle... will that make the paneer dense and inedible? Kindly help with your wisdom and years of experience Manjulaji...

    What you should do is, wash it to get rid of the lemon taste n then leave it in the cheesecloth and wrap it up. Put it between 2 plates n weigh it down over night. U should be able to cut it into pieces n it will be smooth. Remove any water that comes out before taking off the weight and if u need 2 weigh it down longer to make it firmer, then leave it longer or put a bit more weight. If u want the slab 2 have a square shape try using a butter mold.

  • err i tried making my own but i had 2 probs: my paneer tasted like lemon juice and i dont haf cheesecloth :D. is it possible to make paneer w/o cheesecloth and use a strainer instead?

  • Try using curd instead of lemon juice! It tastes good! And yes you can use a strainer but dont put too much pressure !
