I like to eat kimchi. I don't think that kimchi is like water or rice, though. I hope that kimchi will be more friendly-foods to everyone , not just remain best food for only korean. Less spicy, better taste.
When I say sweet I'm not talking about candy "sweet"... Its a natural sweetness like baby carrots. Nappa cabbage is naturally sweet too. When it ferments, the bacteria's converts sugars to lactic acid which makes kimchi less sweet. Most Resturants don't serve fresh kimchi unless the restaurant is always busy. Busy restaurants have a higher demand for kimchi so they have to constantly make new batches of kimchi.

How can you hate it? Not liking kimchi is like not liking cheese, wine or olives... you're missing out on an entire world of taste if you never develop the palate for it.

kimchi is not spicy in the spectrum of spicy foods around the world. it's more sour, tangy than spicy.

Fresh Kimchi is sweet and spicy. As it ages it turns sour.
Kimchi isn't even seen as a spicy food in Korea. Its just seen as a staple like rice.

How do Koreans purchase 100 heads of cabbage for kimchi? They have it delivered to their house!
I love Kimchi so much I have recipes on my youtube page for kimchi pizza and kimchi fried rice.
