  • This is NOT typical. All this grease and bacon fat!! No way! Rice & gandules does NOT typically have bacon in it, much less all this grease. Nasty! Bad recipe.

  • How 'bout skipping the damn nasty bacon altogether, hmm? Yes, I think so.

  • Eating that kind of fatty rice is gonna put someone in the grave sooner than you think. All that fat will clog up arteries. So instead of using all that fat bacon which is loaded with Nitrates that cause cancer. Use those Goya bacon flavored packets and you get the same exact flavor you're looking for without all that fat.

  • Those Sazon and beef boullion packets are loaded with MSG. It's best to use fresh culantro leaves and olive oil colored with annatto. The kettle is made of aluminum. It's best to use a cast iron pot.

  • it comes out soupy because you are using to much water or you are not letting it cook long enough for the water to evaporate

  • @nelida22, you right, too much bacon, but is just family recipe. In Puerto Rico, mostly use smoke jam, not too much.

  • Well, in my house (Puerto Rico) we use smoke jam, never bacon because has too much fat

  • wayy to much bacon thats a heart attack you can add sason instead of the paste and

    i use about 5 small strips of bacon for flavor and defenetely dont need all that ham.

  • those are the best pots to make rice, the bacon part i dont know everybody makes it different depending on the town that u are from in puertorico my family puts "salchichon" in it which is spanish version of italian sausages or even chorizo and green olives for color and taste ..is easy making rice is all about how many people is going to eat if is 4 people then is 4 cups of rice and 41/2 of water and and and the rest of the ingredients is up to taste u make it how u like it!!..

  • @sapphiretwilight85 Hispanic and Whites have always interacted. This goes on in every culture, white chicks dig black guys, Indian guys, but theres alway vice versa just gotta look for it.

  • Thats a bit too much bacon and jamon... even for most Puerto Ricans. You can use much less and still get the same flavor. Unfortunately, although it is delicious, it is very high in cholesterol. So you dont HAVE to add so much. It'll still taste great and is less damaging to your arteries!! :-)

  • Great recipe but my cholesterol just went up 200 points just by looking at it... he he he. I guess that as long it is done for special occasions like Christmas or Thanksgiving which is tradition in my family it is ok to be "bad" on those ocassions.

  • i roast the pork to crispy goodness then shred it and throw it in with the onions and sofrito. really makes the dish.

  • I think it comes out soupy because they dont then tell u that when u put the rice u have to wait to it boils again then after then after that then u put the foil and let cook for 15 to 20 minutes also do the spoon method it works great

  • Mine too or it's too hard. My aunt has shown me time and time again I think she wanted to hit me with the spoon. Like cue1523 said they don't tell you wait till all of the water evaporates. Then stir the rice from the bottom up pulling from the sides into the middle. In the recipe that they give here if you go to the link in the sidebar, it said stir every 10 minutes. My Aunt don't even keep going back to the pot. I'm confused.

  • I forgot to add in this recipe they don't mention the water evaporating, it would be as if you were making regular rice by once the water boils again cover 30-40 minutes on low stirring every 10 minutes until rice is tender. Never heard of such a thing. Just evaporate stir and cook for 25 minutes then call it a day!

  • @HourGlassbyLove Add more rice if its coming out "soupy" or what we call "amogollado"... its too wet and sticky. Just add more rice in your next receipe... or reduce the amount of water by a cup or two. Add enough rice so that it peeks out of the water just a bit. Like an iceberg. Also, you have to stir it occassionally. Flip the rice from the bottom to the top. Do that about 4-6 times. Once the rice starts "fluffing up."

  • @HourGlassbyLove The best way to time the rice is let it boil in med/high for the first 10 mins. then after that you stir the rice, get the bottom and bring it to the top. Then lower the heat to low like 3 or 4, then let it cook for another 10 mins. You don't want to stir the rice alot caus it gets amogollado. Alsoi agree w/ (gza 34) you don't have to add so much bacon or ham, that's something that has lots of sodium in it doesn't need so much of it.

  • @HourGlassbyLove dont add tomato paste and no bacon ..you can add chopped ham thou, the tomato paste and the bacon makes your rice mushy

So if you are doing 4 cups of rice us 4 cups of water...on high tempeture bring your rice to boil once the water vaporate simiar the rice on low heat for 20 min....if you should have any question email me at Maribelkitchen@aol.com
