@RenaeFlowers You could totally substitute cornstarch for Instant Clearjel. Just make sure to whisk it into a little water first before whisking it into the hot chocolate mixture. I don't know exactly how much cornstarch you would want to substitute though. Maybe a tablespoon or two?
@yesterdaysgarden Yes, you can totally leave it out. What that little bit of corn syrup does is give the sauce an almost chewy, fudge like texture. It also keeps the sugar from crystallizing, but you should be fine to leave it out.
I just make a sugar syrup with equal amounts of , vegan, caster sugar and water. Then gradually whisk in cocoa powder until thick. Correct taste with more sugar if it's too bitter.

Regular corn syrup that you use at home is not the same as high-fructose corn syrup. It's still not great for you, but it's mostly glucose suspended in water, so it's no worse than table sugar. And it really is vital to prevent sugar from forming crystals.
I think its deceptive how you say its guilt free. Its loaded with sugar, and Corn syrup (fructose) sugar activates fat making if you are not burning it off. so It is just as bad if you are obese. if your healthy enjoy, I just wanted to reiterate this

@seinfeld11123 cacao itself is not healthy to the body. for healthier body you should leave it out or consume it rarely. carob powder is a great alternative. and this video shows another vegan junk food :) she said "guilt free", what? its healthier to eat macdonalds.
@amirprog cold pressed cacao is actually very healthy, amazing anti oxidants, and like .12g of carbohydrates per teaspoon. its just when u add cups of sugar to make syrups ect. thats why I add stevia to mine
@seinfeld11123 well, i read, watch, and tend to believe what raw food health pros like dr teloren, paul nison, and others saying about it that it dosent matter if the cacao is cold pressed organic or whatever - cacao is toxic to the body, the good things in it are minor and dosent justify consuming it. just google it. i consume it rarely as of now.
