I learned to make a mean Sunday gravy. I put meatballs, Italian sausage, pork chops, hard boiled eggs, and sometimes chicken drumsticks. I serve it with angel hair pasta. That's how my best friend's Sicilian great grandmother showed me. I'm Spanish, but when I cook a Sunday gravy, I could pass for Italian, lol.

LOL For my meatballs I roll them then bake them in a muffin tin 15-20 minuets. let them cool while the sauce is simmering, and then put them in with about 20-30 minuets left.
hey princess diana when u get fresh basil cut the bottom part of the leafs and put them in a vase with water but clean the water like occasionally like once a day that way it keeps fresh longer

I put the tomatoes in the blender a bit & do the garlic & oil first as well. Fry the meatballs, then put in then the suasage and love pork in the gravy, come so tender yum . My best is rigatoni w/ricott

Not only did it make me tear up a bit thinking of my mom and grandmother, but it also helped fill in a few holes that were missing in the recipe my mom left for me bf she passed. Like you, she and my gma cooked without measuring. Also, I think it helped me solve my meatball problem as they were always turning into glorified hamburgers. Great stuff!

Great video. I don't use oregano in my sauce either, not a fan. Thats for pizza. Sorry to say, its sauce. Here in Italia, u call it sugo which translates into sauce in english. Gravy is brown.
You two are a riot. I'm with you on not browning the meatballs first. They taste better when they cook in the sauce. I also add milk, but one trick that I've heard my Nana did is soak a piece of bread in milk. Then, squeeze it out, chop it up small, and add it to the meat.
Sorry I agree with Pippy. Never put the meatballs in raw. I learned from my italian parents when I was 7 & I never put in raw meatballs. Love you Pricess Di, but no raw meat.
I like Diana! I do not measure! In my meatballs, I add 2 eggs, parmesan cheese, basil, seasoned salt, pepper, marjoram, one large super chopped onion, parsley, a little milk. I fry my meatballs in 2 and a half tbs olive oil!

It took a while for my MIL to give me her gravy recipe. which is somewhat similar to how you do it but she adds grated parmesan to her sauce. red pepper is big here too. bracole is delicious. made some today for my gravy. Remember to buy the prevacid- you'll need it. Anything with tomatoes becomes very acidic when it's cooked too long. Nothing needs to be cooked for 3-4 hours.
Even though there might be some truth to what you said, some might disagree with you. even still Ragu comes from the North and Gravy either originated in Sicily or in Brooklyn.

You two are a riot. I'm with you on not browning the meatballs first. They taste better when they cook in the sauce. I also add milk, but one trick that I've heard my Nana did is soak a piece of bread in milk. Then, squeeze it out, chop it up small, and add it to the meat.

Your Nana is so right... I didn't have any bread crumbs for my meatballs once and used wheat bread and they were soooo good.

I think its better to sear your meat in the same pan you make the sauce in. Put the meat aside and then make your sauce.
Theres no need for an extra pan to be used.

Sorry I agree with Pippy. Never put the meatballs in raw. I learned from my italian parents when I was 7 & I never put in raw meatballs. Love you Pricess Di, but no raw meat.

I like Diana! I do not measure! In my meatballs, I add 2 eggs, parmesan cheese, basil, seasoned salt, pepper, marjoram, one large super chopped onion, parsley, a little milk. I fry my meatballs in 2 and a half tbs olive oil!

It's also my understanding that in Italian neighborhoods throughout the United States, the Sunday Gravy adaptation of Ragu Napoletana is usually made using braciole as the main flavor component. This term would be deemed incorrect in Italy, since the proper name for cutlets of beef rolled around a filling would be involtini di manzo. Braciole usually refer to pork chops, while a braciolone would specify a pork loin that id butterflied, pounded thin and encasing some sort of stuffing, no?

As for the meatballs, I am made aware that they are not meant to be incorporated in the classic Neapolitan Ragu except for certain baked pastas like lasagne or baked ziti (alla sorrentina). It is then that they are formed no larger than a small grape and fried without being cooked in ragu. Whenever they feature in an Italian kitchen, meatballs (polpette) are usually either pan-fried or braised in wine or broth with vegetables.

Your a hoot! hehe my husband says your the spitting image of his aunt. It took a while for my MIL to give me her gravy recipe. which is somewhat similar to how you do it but she adds grated parmesan to her sauce. red pepper is big here too. bracole is delicious. made some today for my gravy. Thanks for the video! enjoyed it.

it reminds me of my granny's tomato sauce meatballs XD i'll ask her to make me some.
next time i'll make ragù, i'll try using peeled tomatoes instead of chopped ones. it might taste better :)

Remember to buy the prevacid- you'll need it. Anything with tomatoes becomes very acidic when it's cooked too long. Nothing needs to be cooked for 3-4 hours.

Even though there might be some truth to what you said, some might disagree with you. even still Ragu comes from the North and Gravy either originated in Sicily or in Brooklyn.

Thank you for the great video. We have the same tastes in cooking! I made Sunday gravy about five years ago, but it didn't come out too good.
One question for you: did you make the bracciole yourself, or did you buy it prepared from a butcher? I'm afraid to try making the bracciole myself. If I could get it ready made, I'd be willing to give this another shot!
