It's a very nice and delicious recipe. It doesn't take all that much strength, only patience and attentiveness. If you want to make good soba, you must put effort into it.

Soba means buckwheat, you can find buckwheat grouts and flour in English healthfood stores- this guy is making dough for soba noodles (similar to spaghetti but with a delicious nutty taste). Soba doesn't have gluten, so making a dough requires more patience and technique than for wheatflour dough (which has the natural elasticity of gluten). It's possible to make soba flour more easily by adding 20% or more of wheatflour.
