It looks like they are cultivating Oyster Mushrooms, probably Pleurotus ostreatus.

Mycelium is the bacteria used to grow them. I haven't a clue what the actual mushroom is called. Sorry.

Is there a name or seed name for those mushrooms they were growing or is it simply called Mycelium? This is the most interesting superfood I've seen. It looks really hard to grow though.
