Sorry, but I just have to comment. As an outside observer and one that has not even tasted espresso, I can say this. If I shelled out $1,800.00 for a Giotto espresso machine, and it pulled sour shots, I would go ballistic on the store that sold it to me. I am 65 years old and in my entire life, have never tasted coffee that could even be described as sour (bitter, nasty, weak, maybe). Your little demo convinced me to never buy an espresso machine if they are that finicky. Defective machine?
@dmlockwood The machine isn't finicky at all; you'd have the same results with any machine you purchased. As the coffee ages, it's going to get more sour, period. - Kat
It might be interesting to compare four bags of coffee, all with the same roasting date, after storing by various methods for a couple of weeks. One stored in an unopened bag, one stored in an opened and resealed bag, one stored in an Airscape, and one stored in a Coffee Bean Vac.
@fabulmanxxx We are doing a test to see if storing in a freezer is good/bad/ugly. Moisture in the fridge could have an adverse affect on it, we're not sure yet. We're assuming so, but haven't performed a practical test to see. - Kat
Love your video. One suggestion here: if you want accurate test results, you should blind the taster. This means that whomever is tasting doesn't know what they are tasting (airscape vs. bag) they then rate the quality without knowing what they are tasting.
@schlif Ha - I don't think Gail would go for that at all. ;) We're far from scientific in our testing, period, so this would be a departure for us. However, we have drank enough shots to be able to tell the difference between the two, no question. If you try a similar test, you'll see an extremely noticeable difference like we did a couple weeks in. - Kat
Hey sorry to bug you. You probably had a coffee roasted for you the day of shooting or the day before but you didn't tell us what the roasting date of the coffee was.
@klarinetta We stated it was roasted on 10/6, which was three days before shooting (a 72 hour post roast rest period is generally recommended to allow the coffee to out gas a lot of the CO2). - Kat

I'm really tickled to see the reaction from the "excellent" shot in the beginning. Nice! I bet you can pretty much pull excellent shots at will with the beautiful machines you have on hand in your store!! :-) Also, I love this video! I have the large Airscape container in stainless and I I really enjoy using it, it's kinda fun in a way! I'm also enjoying my Cirqua "Formula" water in all my brewing...wonderful! @jaymart46 Bitter generally connotes over-extraction -- either the coffee was roasted very darkly, the coffee is ground too finely or the temperature is too hot. - Kat
@AndyHill74 In our Crema Stability Testing video we tested them over several months. I would say you wouldn't want to keep it around unopened for longer than a month, but using it within a couple weeks of roast would be ideal. - Kat
It would of been neat to throw the bean vac in here and see how much improvement over the airscape there was. i usually go through one of the 2.2 lb bags of lavazza in a month to 2, so maybe i should store it differently. although i am not doing straight shots.
