It does work great going up and down stairs with a very full cup! There is another youtube video where you can see this. BTW, I can also run with a pretty full cup.

If I know my science, it's because gravity is a weak force. The speed of the cup on the holder pushes the cup and coffee into the base. The force pushing the cup is greater than gravity, so constantly spinning will stop it from spilling. Ever gone to a carnival on gone on a Gravitron where it pushes you into the wall and you can lie on the wall sideways without falling? Same thing.
