That and we know that Dale is crazy and that he's in possession of a number of weapons: guns, knives, poisons, etc. You want to give a crazy guy bad news like that? That'll be a bloodbath. But what I don't get is how doesn't he get it after Joseph was born. He's white and Joseph is brown (American Indian). But I guess crazy people can be dumb too.

So much so he plays on his paranoid trait that everyone expects of him to hide the fact that his son isn't his genetically and Nancy isn't his loyal wife. There are times where he just acts a little too stupid. The reason Dale does this is because he knows if he shows signs of knowing the truth Nancy will be forced to John Red Corn not wanting that he pretends not to know to save his marriage. He is just in a tough spot sadly.
