  • @mediate27 haha me neither! But once you've been cooking for that long, you kind of get the feel for how much you've put in by eyeballing it :) I would advisement dump the whole thing in!! Haha

    one suggestion: if you want the cake to rise enough, you actually dont need to butter the pan, because the cake will need something to grab on to get higher. butter will prevent the sticking part, then the cake will just simply stay dense after its cool. :-)

  • 1 lb 7% semisweet chocolate melted and mixed with butter

    9 eggs separated

    3/4 cup sugar added to yolks (mix)

    tbsp sugar added to whites (whip)

    put chocolate in yolks

    fold in whipped whites

    dang this actually seems doable

  • what is the point of making the "base" warm again? Like the part where he only puts a little chocolate in the yolks? Then a couple seconds later he puts the whole thing in. Why can't you just do that from the start?

    Also, why does he say to not break the whipped egg whites and then proceeds to just mix the whole thing together like one big blob? If it's going to get mixed in the batter like that, why not mix it in like that from the start instead of working around the whipped egg whites?

  • He said so himself, if you pour all the chocolate at once is too much heat for the eggs and you get scrambled eggs....

  • im preety sure its because if you put the whole egg whites in the chocolate, the stiff peaks will fall because of the constant stirring and become liquidy.

  • More then likely you could easily do it by hand as long as you have a whisk and do it well throughout. Make sure its whipped good and it should be fine : )

  • but you cant make them fluffy and white by hand but it shouldnt matter flavor wise as much as texture good luck!

  • well, hand mixers can be real cheap, my thinking is that if you are into making cakes, that is the least thing you need to own, even for box mixes ;)

  • It would take forever! you can get a cheap egg beater for a few bucks... doesnt have to be fancy.
