No it shouldn't have. The punch's inertia transferred to the neck of the horse, and caused the head and spine to rotate altering the center of gravity. It fell exactly how it should have.

The horse is trained to fall, it's probably been featured in several westerns were someones horse was shot from underneath them. They don't actually gun down the animal. Note how the rider jerks the reigns at the moment before impact and how the horses back legs seem to telegraph that he's about to go down.
